<p>Det man förr kallade amuse bouche kallas idag för prolog på F/L. Ett potpurri av små härliga aptitretare som tex krispig svål, blodplätt, vichysoisse 2.0, macaron mm mm. Det är ett gediget mathantverk med milda rena smaker, olika texturer och stor portion mathumor.</p>

<p>Tartar på havskräfta med äpple och riven torkad kaviar. Underbar balans mellan den söta kräftan, syran från äpplet och sältan från kaviarn. Strålande rent ut sagt.</p>

<p>Ostron, havtorn och sjögräs. Lättbakat ostron, lite ljummet med fräsch syra och sälta. Toppen</p>

<p>Soppa på karamelliserad lök och lakrits. Detta är numera en klassiker som jag hoppas att dom aldrig tar bort från menyn. En soppa som har allt man vill ha. Lång god eftersmak av lök, perfekt krämig med touch av lakrits. Helt bländande gott.</p>

<p>En annan klassiker som byter skepnad är deras tartar. Idag gjord på lamm med getost från Vilhemsdals Gårdsmejeri. Tillsammans med ett glas sherry en oslagbar kombo.</p>

<p>Marulk med tuppkam och hasselnötter. Marulk har aldrig varit min favoritfisk, men jag måste erkänna, att när den lagas och serveras på F/L så är den briljant. Saftig utan den där så vanliga gummikonsistensen och smältande mör. Tack Björn för att du har fått mig tycka om fulingen!</p>

<p>Krispigt stekt spädgris med kål och svart vintertryffel. Gris kan inte bli bättre än såhär, punkt slut.</p>

<p>Grönsaksdesserter är verkligen inte min favorit. Men återigen så får jag tänka om. Rödbetor, svarta vinbär och 100 årig Balsamicovinäger. Sött och väldigt gott.</p>

<p>Middagen avslutades som den började, med små mignardiser.<br />
Det blev en 4 timmar lång sittning med mat, servering och vinpaket i absoluta världsklass. På F/L så försöker man inte matcha varje rätt med ett nytt vin. Det är ett förlegat sätt som nästan alltid lämnar en stor portion besvikelse över middagen. Tanken på F/L är att istället servera viner som är mogna och väldigt goda att dricka, inte bara få små prover.<br />
Något man verkligen skulle önska att många fler kunde ta efter istället för att servera massa konstiga obskyra druvor/viner för en billig tråkig penning. F/L har verkligen gått rätt väg med detta tänk.</p>
<p>Köket. Ett idag mer moget kök, dock med samma lekfullhet och fokus på råvara. Att det är landets ledande restaurang råder det inga som helst tvivel om, att dom återigen ignorerades av Michelin guiden är bara beklagligt och irriterande. Det är en 3 stjärnig restaurang i mina ögon, en bländande 3 stjärna.</p>

				<content:encoded><![CDATA[<p>Om man vill äta gott i SF så finns det ett gediget stort utbud, dock så finns det få restauranger som levererar sådan bra mat till ett så billigt pris som Commonwealth.<br />
Restaurangen ligger inte kanske i dom hippaste kvarteren men väl värt en långpromenad från city kärnan eller en taxi?! Mission street mellan 18e och 19e gatan, vägg i vägg med den underbara kinesen Mission Street Chinese food.</p>
<p>Finns två alternativ att välja på. Antingen så ger man sig på 7-rätters avsmakningsmenyn för 70$ eller så väljer man från ala carte menyn och sätter ihop en egen 4-5 rätters för 40-50$. Vi valde det senare alternativet.</p>

<p>Oysters, trout roe and crispy salad. Härliga havssmaker med bra balans i det salta och syran från  citronkrämen, rent snyggt och väldigt gott.</p>

<p>Hedgehog mushrooms, potato, preserved lemon, green and fermented garlic, pomegranate. Stekt taggsvamp med len potatiskräm och saltad citron var kanske en av kvällens bästa rätter?</p>

<p>Cedar grilled mussels, pork belly, broccoli bread pudding, celery root, saffron, cured egg. Smältande mör grissida kan bara betyda succé! Annorlunda kombo med saffran men det funkade då saffranssmaken var väldigt mild och len. Supergott med dom lite röksmakande musslorna och dom söta rotfrukterna.</p>

<p>Pork jowl, blood orange, rutabaga, sweet potato cooked in duck fat, tarragon, matcha. Griskind med majrovor, sötpotatis och grönt te är kanske inte den första kombom man tänker på som &#8221;match made in heaven&#8221;, men dock en klockren sådan. Saftigt mediumstekt och smörigt mör, bara topp!</p>

<p>Root vegetables cooked in ash, brussel sprouts, shitake-onion jus, truffle froth var kanske måltidens mest anonyma maträtt, dock god utan några stora smaker.</p>

<p>Apple, lardo, chicory, beer and cheddar cream, rosemary cracker, pickled mustard seed. Sött, salt och mycket syra, med andra ord en väl avvägd starter!</p>

<p>Coconut, makrutlime pannacotta with citrus salad var tyvärr kvällens besvikelse. Som det ibland händer så blev det alldeles för mycket gummipuck över rätten med alldeles för mycket gelatin i pannacottan som tyvärr inte kunde räddas med den annars så goda citrus salladen.</p>

<p>Peanut butter semifreddo var kanske inte den mest avancerade desserten, men ack så god! Kan inte rå för det, men choklad och jordnötter är en larvigt god kombo.</p>

<p>Poached apples, hazelnut ice cream, fennel and cinnamon oat clusters. Väldigt svenska smaker och väldigt goda smaker.</p>
<p>Efter att ha rest och ätit en vecka i Napa o SF så var Commonwealth en av höjdpunkterna. Ren, snygg mat med väl avvägda smaker till ett kanonpris. Kan varmast rekommenderas för dom som besöker stan nästa gång.</p>

Och så var det, bara att blunda och gå! Jädrans vad moppar!</p>

<p>Förutom &#8221;gå-över-gatan-lexikon&#8221; så var det vissa ställen som absolut inte fick missas. En av dom mest omtalade, kopierade och välbesökta krogarna i Saigon är Quan An Ngon. Stor restaurang med ljudnivå som motsvarar starten av en Jumbo Jet, en miljon sittplatser och meny lika lång som en gammaldags telefonkatalog slog vi oss ner och blev vägledda av en ung kypare till några av krogens huvudnummer.</p>

<p>Runt om i restaurangen så fanns det olika stationer där man bla lagade nudlar, vårrullar, wokade, blandade sallader mm mm. Rent, snyggt och fräscht.</p>

<p>Kalla rispappersrullar med räkor, friterade vårrullar och räkspett var en bra och god början.</p>

<p>Stekta rispannkakor med fläsk och böngroddar var väldigt kladdigt och svårätet, men attans gott.</p>

<p>Hot Pot på räkor, havsabborre och vattenspenat, massor av vattenspenat. Gott, men galet för mycket vattenspenat.</p>

<p>Ett absolut måste när man är på resa i Asien är att besöka den lokala marknaden. Råvaror i toppklass, allt nytt, färskt och solmoget.</p>

<p>Ett annat bra ställe var Nha Hang. Grillat fläsk med jordnötter, vårrullar, sallad på biff med grön papaya var några av dom rätterna som slank ner. Fräscht och mycket gott.</p>

<p>Sallad på bläckfisk med chili och thai basilika. Strålande gott med varm god hetta!</p>

<p>Sallad på vattenspenat med fläsk, chili, rostad lök och jordnötter. Perfekt med sälta, sötma, hetta och texturer. Kanon!</p>
<p>Saigon är verkligen en härlig matstad med massor av sköna ställen i alla dess olika prisklasser. Normalt sett så kostar en middag med 4-5 rätter inkl några flaskor god lokal öl ca 300-350:- för två personer, det får anses vara överkomligt!<br />
Det är en otrolig puls i staden med sjudande restaurangliv, trevliga barer och galen trafik. Definitivt värt ett besök, eller tom en egen resa som Michelin gubbarna skulle utrycka sig.</p>

<p>Efter 3 timmar och socker i mängder så rundade vi av med en kopp svart kaffe och lite kaffegodis.<br />
Det är verkligen inte varje dag man äter en 5-rätters dessert middag. Detta har jag endast gjort på Espai Sucre i Barcelona vid något tidigare tillfälle. Det som skiljer sig betydligt är smaksättningen.<br />
Daniels desserter är mera rena sötaktiga desserter medan Espai Sucre balanserar på ett mellanting av för/varmrätts smaker på ett lekfullt och experimentellt sätt.</p>
<p>Att äta hos Daniel är nästan lite teatraliskt?! Det är show, roliga historier, tankar och självfallet väldigt gott.</p>
<p>Är man dessertfreak/sockernarkoman/sötsaksfoodie så är Daniel´s nya <a href="http://www.pastrydesign.se/">My Table</a> ett kul och roligt alternativ att testa flertalet desserter hemma hos Daniel med allt vad det innebär att äta hemma hos en av landets vassaste konditorhjärnor.</p>

<p>Another cool place we visited was the Phnom Koulen Waterfalls. This is actually the mountains from where they took the stones from and transported on rafts down the river and built all the temples at Angkor Wat and it´s surroundings with. </p>

<p>Two traditional Cambodian dishes we had at the waterfalls was, Fish Amok and Chicken in green curry. Delicious clean flavours with perfect balanced heatness.</p>

<p>Another interesting stop in Siem Reap is FCC. Kind of modern food with a mixture of Khmer and western cuisine.</p>

<p>Seared seabass with curry-coconut sauce, bok choy and mashed potatoes. Warm balanced flavours and great cooked fish.</p>

<p>Baby back ribs with asian slaw, melting tender ribs with a sweet/sour glaze was just great.</p>
<p>After spending almost 2 weeks in Cambodia I&#8217;ve eaten a lot of very good food. Very clean food without any technical fuzz, just tasteful, colourful and honest food.<br />
Extremely kind people and service minded, a lot of local fresh produce and very cheap country to travel in.</p>

<p>Cambodia is not maybe known as a gastronomic destination, but it is definetely worth a trip.<br />
The Central Market in Phnom Penh is  a fascinating chaos, here you can find the butcher next to the fish-lady and the greens. For a western cook and chef, maybe not the most common line up at the market?</p>

<p>A lot of small restaurants are lined up on the east side of the market and offers a lot of exciting variations of Khmer food. We made the choice to try some grilled squid, giant prawns and two different kind of rolls. One with shrimps and vegetables and one with minced meat and onion. Everything fresh and  delicious.</p>

<p>Här kommer en del reflektioner på året som har gått.</p>
<p><strong>Årets bästa restaurangbesök utan någon som helst rangordning 2012.</strong></p>

<p>Manresa i Los Gatos Kalifornien. Kanske lagar David Kinch USA´s godaste och hälsosammaste mat idag?!<br />
Bländande från första till sista rätten.</p>
<p>Frantzén Linderberg. Sveriges/Skandinaviens i särklass bästa krog behöver ingen presentation. Växer mer och mer för varje år som går. </p>
<p>Chefs table at Brooklyn Fare. Cesar Ramirez NY-mexare lagar den renaste och naknaste maten med japanska influenser. Ståtar idag med 3 stjärnor i Michelin guiden, och äntligen med ett alkoholtillstånd i bagaget så att underteckand ej behöver släpa med sig ett vinpaket nästa gång!</p>
<p>Saison i SF. Joshua Skenes är den mest lysande stjärnan i San Francisco. Med nya lokaler from årsskiftet ser jag framemot nya grymma måltider.</p>
<p><strong>Bästa hamburgaren 2012.</strong></p>

<p>Burger and Beer Joint på South Beach i Miami. 100 sorters öl och godaste hamburgarna jag nånsin har ätit. 3 besök på en vecka talar sitt tydliga språk!</p>
<p>Minetta Tavern´s Black Label Burger är fullkomligt hänsynslöst god. Med i en annars så hamburgertät stad som New York så är det burgaren man inte bör missa.</p>
<p>Gott´s Roadside i St Helena Napa Valley är ett säkert lunchhak med kanonburgare, supersmarriga tacos och uppfriskande god lemonad.</p>
<p>AG i Stockholm. Året som gått har fött många nya hamburger-wannabies som tävlar om att vara Nr 1 på hamburgerhimlen. Finns dock bara en 1a. AG´s burgare, en riktig &#8221;håll-käften-burgare&#8221;. Nu med nytt recept är den bättre än någonsin.</p>
<p><strong>Årets mest uttjatade restaurangbeskrivning 2012.</strong><br />
Vi jobbar med lokala närproducerade råvaror! Tröttsamt och uttjatat. Enough said!</p>
<p>Ps. 1971 startade Alice Waters Chez Panisse i Berkeley, hennes motto då var ovanstående. Hon jobbar så än idag.</p>
<p><strong>Årets mest uttjatade matreportage 2012</strong>.<br />
Alla krönikor med kockar i kockkläder som påtar i landet eller bär omkring små lamm/spädgrisar och berättar om att dom endast jobbar med lokala närproducerade råvaror. Också uttjatat.</p>
<p><strong>Årets bästa vinupplevelser 2012.</strong><br />
Shibumi Knoll, ‘Buena Tierra Vineyard,’ Russian River Valley 2009 på Redd i Yountville tillsammans med Glazed pork belly, apple purée, burdock, soy caramel och Yellowfin tuna tartare, asian pear, avocado, chili oil, fried rice, cilantro. Religiös upplevelse.</p>
<p>Besök hos Mimi DeBlasio och Bret Lopez på Scarecrow med 2008 M.Etain i glasen. Oförglömligt!</p>

<p>1964 Cabernet Sauvignon Georges de Latour Private Reserve hemma hos min gode vän Michel, tillsammans med ytterligare goda vänner. Kanonvin för sin ålder.</p>
<p>1998 Cuvée Marie Burrier från Henri Bonneau under samma kväll. Gudfadern i Chateauneuf du Pape gör viner som ingen annan i området.</p>
<p>Besök hos Sashi Moorman och Paul Lato i St Barbara County, fun-tasting med bländande viner på såväl fat som flaska. Alltid lika kul, intressant, bildande och gott.</p>
<p>2002 Monfortino och 1955 Cheval Blanc hos Stefan en tidig höstmiddag. Unforgiven!</p>
<p><strong>Årets köttkrog 2012.</strong><br />
AG, är detta Sveriges enda steakhouse? Kött i världsklass!</p>
<p>Cajun marinated Rib Steak på Smith &amp; Wollensky i New York, tillsammans med en flaska Napa Cab så är detta den fulländande köttupplevelsen.</p>
<p>Porterhouse på Peter Luger med Luger&#8217;s Special German Fried Potatoes är väl värt resan till Brooklyn!</p>
<p>Djuret i Stockholm, håll utkik efter grisen eller kossan som temat. Kavla upp ärmarna och låt dig förföras. Strålande!</p>
<p>Önskar alla där ute ett riktigt Gott Nytt 2013 med nya stora mat-och dryckes upplevelser. Cheers!<br />
Sist men inte minst en liten bokrekommendation för alla matnördar eller matnördwannabies.<br />
En mörk och fascinerande berättelse om en sann foodie.</p>

<p>Baco Mercat serves Middle Eastern inspired food with big warm flavours for a ridiculously cheap price.<br />
The best way to eat and order is so called, family style dining. </p>

<p>Hamachi Crudo, abkhazian chile spice, avocado, hash brown. Ohh man this was good! Spicy, but not hot and super big flavours, absolute delicious!</p>

<p>Caesar Brussels sprout, pecorino, anchovy, garlic. Maybe not so good looking dish, but very tasty.<br />
Something that can sometimes annoy me is, when I order salad is that it is to cold, not this time. Here it was in perfect temperature where the flavours really come through.</p>

<p>Bok choy with cumin-spiced lamb belly, arbol, sesame, sunflower. This dish maid me almost speachless!<br />
The meat was super tender and juicy with warm middle eastern spices. Stunning! Enough said.</p>

<p>Last but not least, El Cordero, merguez ragu, harissa, feta. Pizza new style with crispy flatbread and delicious topping.</p>
<p>Sometimes it&#8217;s nice to visit casual places like Baco Mercat. It&#8217;s relaxed without a lot of must-haves in terms of dress codes, 4 hour long tasting menus with boring wine pairings and so on. Sometimes you just wanna have fun-dinner. Just like we had these evening!<br />
If you are in LA, do not miss this great spot. It is definitely worth a detour if not a whole trip!</p>

<p>After a few days in Napa so we went toward SF and an new exciting evening.</p>
<p>Atelier Crenn is definitely the newest shining star at SF&#8217;s restaurant scene. Chef Dominique Crenn is a extremely talented chef with a great sense of subtle flavors presented in a healthy and beautiful way.<br />
They opened around 1,5 year ago and has already received 2 stars in Guide Michelin! Good work.<br />
Located in the corner of Fillmore and Greenwich is not the coolest address in SF, but definitely worth the trip and effort to go there.</p>

<p>What is a meal in october without mushroom? Dominique calls it &#8221;Walk in the forest&#8221;. Couple of different kind of mushrooms, herbs and flowers it was exactly like a walk in the forest. But more tasty maybe?!</p>

<p>Grain and seeds, Dashi, Yuzu Kosho. This was a funny dish! It reminded me of a japanese healthy breakfast? In a very good way though!It was crunchy, salt with a mild sour taste. Actually all the elements you need to create a good dish.</p>

<p>&#8221;Birth&#8221;Duck, Chocolate, Corn, Mushroom. Actually the only dish that i didn´t like. Think it was to sweet for my taste and just did not work so well in the menu.</p>

<p>Squab, Huckleberry, Sunchoke. The squab was just melting in my mouth, it was super tender with great complement like the deepfried sunchoke (Jerusalem artichoke) and the mousse of the liver.<br />
Great dish in all aspects!</p>

<p>Betterave or beetroot in english?! Wonderful sorbet of beetroot´s with a chocolate straw and grains.<br />
Not sure that i understood the grain, but still a very good end of a great meal.</p>
<p>However, there was one thing that bothered me on a few occasions. It was the porcelain. Unfortunately, it was several times a bit awkward to eat out and not easy to, for example, bring up the sauce from the plate. Some of the plates were chipped for example because of the uneven quality of the porcelain. Not good at all!</p>
<p>Otherwise, definitely a restaurant that you will hear a lot about in the future. Once they have expanded the wine list and maybe started to work more with classic white porcelain, they will be on the Top 50 Best list soon.</p>
<p>I will be back in february for sure!<br />
